Last night I made one of my most favorite meals my mom used to make growing up, Turkey Shortcake with Gravy. It is great comfort food, easy to make, and soooo dang delicious. You know it’s good when the table is quiet except for the tingling of forks and knives!
I am happy to share my recipe.
Turkey Shortcake with Gravy
- Jennie-O frozen turkey roast with gravy (I prefer the white meat; there is also white/dark available).
- 2 ¼ cup Biscuit mix
- ½ tsp Sage
- 1 tbs Sugar
- 1 tbs chopped onion
- 2 tbs melted butter
- ½ cup milk
Cook roast at 375 degrees for 1 hour, move to 425 degrees and cook 50-60 minutes more, until internal temperature reads 165 degrees. Meanwhile, combine biscuit mix, sage and sugar in bowl. Add onion, melted butter and milk. Stir with fork to form a soft dough. Turn dough onto cookie sheet and pat into 8” x 6” rectangle ½” thick. Bake 15 minutes in 400 degree oven. Cut into 6 pieces. Prepare gravy according to directions. Place slices of roast on shortcake. Ladle gravy over each portion.
