Drop these fresh ingredients into your slow cooker, and a few hours later your family will feast on savory Slow Cooker Pork Tacos!

A little citrus, a lot of spice … these slow cooker pork nachos will hit the spot with your family this fall into winter! 

Most of these fresh ingredients you’ll likely have on hand. The exception may be a chipotle pepper in adobe sauce. This is found where canned/jarred peppers are in most grocery stores. It adds a smoky heat to any dish – from meats to dips!

Slow Cooker Pork Tacos

Before you get started, know that this recipe uses a two-step cooking process: First in the slow cooker, then in the skillet to brown. That said, you can easily skip the skillet step to make your evening a little easier!

Directions:

In a small bowl, whisk together the dried oregano, cumin, salt and pepper. Then rub the seasoning mixture onto pork shoulder on all sides.

Add onion, garlic, orange juice and peel, lime juice and chipotle pepper to slow cooker. Place pork on top.

Cover and cook on low for 4-6 hours, or until internal temperature reaches 145° F.

You might find yourself closing your eyes and smiling when inhaling the citrus-spice scent when it’s just about done! SO. GOOD.

Remove pork from slow cooker onto cutting board, let cool slightly and shred with two forks.

Heat oil in a large skillet, add pork and a little juice from the slow cooker. Brown the pork, turning often, until the juices have evaporated. Depending on the size of your skillet, you may need to do this in two batches.

Assemble the pork into tortillas, add your toppings and serve immediately.

This recipe will have enough ingredients to make 12-15 tacos (likely serving 5-6 hungry humans).

Ingredients

Pork ingredients

  • 3-4 lb pork shoulder
  • 1 1/2 tsp dried oregano
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/3 C orange juice
  • 2 tsp orange peel, finely shredded
  • 1/3 C lime juice
  • 1 chipotle pepper in adobe sauce, chopped
  • 2 Tbs canola oil

Taco ingredients

  • 12-15 corn or flour tortillas
  • limes
  • Cotija Mexican cheese, crumbled
  • pico de gallo
  • guacamole
  • salsa (try with mango salsa!)

Instructions

  1. In a small bowl, whisk together the dried oregano, cumin, salt and pepper 

  2. Rub seasoning mixture onto pork shoulder on all sides

  3. Add onion, garlic, orange juice and peel, lime juice and chipotle pepper to slow cooker

  4. Place pork on top

  5. Cover and cook on low for 4-6 hours or until internal temperature is 145 degrees F 

  6. Remove pork from slow cooker onto cutting board, let cool slightly

  7. Shred with two forks

  8. Heat oil in large skillet 

  9. Add pork and a little juice from the slow cooker

  10. Turn pork over often to brown it, until the juices have evaporated 

  11. Serve immediately with tortillas and toppings
