Blucchini Bread Recipe

A zucchini recipe never tasted sweeter! A zucchini bread recipe made even more delicious with fresh blueberries, we call it Blucchini Bread.

Ingredients

  • 3 eggs
  • 1 cup oil or 50/50 oil and applesauce
  • 1 1/2 cups sugar
  • 3 cups zucchini peeled and grated
  • 2 tsp vanilla
  • 2 cups blueberries
  • 3 cups flour (I use 1 C whole wheat + 2 C white)
  • 1/4 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3 tsp. cinnamon

Instructions

  1. In a medium bowl, mix flour, baking powder, baking soda, salt and cinnamon.
  2. In a mixing bowl, beat eggs until light and foamy. Add next 4 ingredients, mixing lightly.

  3. Combine flour mixture into batter and blend. Gently fold in blueberries.

  4. Pour into two greased loaf pans and bake at 350 degrees for 50-55 minutes for a dark metal pan, or 5 minutes longer for stoneware. Cool for 10 minutes before removing from pan.
